Delicious and fudgy zucchini brownies with an optional creamy frosting. These brownies are a great way to sneak in some vegetables.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup grated zucchini, squeezed dry
  • 1/2 cup chocolate chips (optional)
  • For Frosting:
  • 1/2 cup unsalted butter, softened
  • 1/4 cup unsweetened cocoa powder
  • 2 cups powdered sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together flour, baking soda, salt, and cocoa powder.
  3. In a separate bowl, beat together sugar, eggs, vegetable oil, and vanilla extract until well combined.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  5. Fold in the grated zucchini and chocolate chips (if using).
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  8. Let the brownies cool completely in the pan before frosting.
  9. For the frosting: Beat softened butter and cocoa powder until smooth.
  10. Gradually add powdered sugar and milk, alternating between them, beating until smooth and creamy. Stir in vanilla extract.
  11. Spread frosting evenly over the cooled brownies.

Notes

  • Ensure the zucchini is squeezed dry to prevent soggy brownies.
  • For a richer chocolate flavor, use good quality cocoa powder.
  • Allow brownies to cool completely before frosting for best results.
