- 1/2 cup (75g) mixed berries (fresh or frozen – blueberries, raspberries, strawberries)
- 1 tablespoon cornstarch or arrowroot powder
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease a small baking dish (about 8×8 inches or a 9-inch pie dish).
- In a large bowl, combine the cottage cheese, eggs, sugar, and vanilla extract. Mix well until smooth. You can use an immersion blender or food processor for a smoother consistency if desired.
- In a separate small bowl, toss the mixed berries with the cornstarch or arrowroot powder. This helps prevent the berries from sinking to the bottom.
- Gently fold the floured berries into the cottage cheese mixture.
- Pour the mixture into the prepared baking dish.
- Bake for 30-40 minutes, or until the edges are golden brown and the center is set. A knife inserted into the center should come out clean.
- Remove from the oven and let cool slightly before serving. It can be enjoyed warm or chilled.
