Ingredients

- 1 pound boneless, skinless chicken breast
- 1/2 cup mayonnaise
- 1/4 cup chopped celery
- 1/4 cup chopped red onion
- 2 tablespoons chopped fresh dill

- 4 cups mixed greens
- 1/2 cup cherry tomatoes, halved
- 1/4 cup sliced cucumber
- 2 tablespoons toasted almonds
Instructions
- Cook chicken breast until done. Let it cool, then shred or dice it.
- In a medium bowl, combine shredded chicken, mayonnaise, celery, red onion, dill, and lemon juice.
- Season with salt and pepper. Mix well.
- Divide mixed greens among serving plates.
- Top the greens with the chicken salad mixture.
- Garnish with cherry tomatoes, cucumber, and toasted almonds.

- For a creamier salad, use full-fat mayonnaise.
