These Smookie S’mores Cookies combine the classic campfire treat with a chewy cookie, featuring graham cracker crumbs, chocolate chunks, and toasted marshmallows.

- 1 cup (2 sticks) unsalted butter, softened
- ½ cup granulated sugar
- ¾ cup packed light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 ¼ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup graham cracker crumbs
- 1 ½ cups chocolate chunks or chips
- 2 cups mini marshmallows
Instructions
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla extract.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Fold in graham cracker crumbs and chocolate chunks.
- Drop rounded spoonfuls of dough onto prepared baking sheets.
- Bake for 8-10 minutes, or until edges are golden.
- Remove from oven and immediately top each cookie with mini marshmallows.
- Return to oven for 2-3 minutes, or until marshmallows are lightly golden and puffed. Watch carefully to prevent burning.
- Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
Notes
- For extra toasted marshmallows, you can use a kitchen torch after baking.
- Store cookies in an airtight container at room temperature for up to 3 days.
- For best results, use good quality chocolate.
