  • 2 lbs boneless, skinless chicken thighs
  • 1 tbsp olive oil
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 1 (10 oz) can diced tomatoes and green chilies, undrained
  • 1/2 cup chicken broth
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded Monterey Jack cheese
  • Optional: chopped fresh cilantro for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season chicken thighs with salt and pepper.
  3. Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken thighs for 2-3 minutes per side until golden brown. Remove chicken from skillet and set aside.
  4. Add sliced onion to the skillet and cook until softened, about 5 minutes.
  5. Add minced garlic and cook for 1 minute more until fragrant.
  6. Stir in diced tomatoes and green chilies, chicken broth, chili powder, cumin, salt, and pepper. Bring to a simmer.
  7. Return the chicken thighs to the skillet, nestling them into the sauce.
  8. Cover the skillet and transfer it to the preheated oven. Bake for 25-30 minutes, or until chicken is cooked through and tender.
  9. Remove skillet from the oven. Sprinkle shredded Jack cheese over the chicken and sauce.
  10. Return to the oven, uncovered, for 5-7 minutes, or until cheese is melted and bubbly.
  11. Garnish with fresh cilantro if desired.
