  • 1 pound large shrimp, peeled and deveined
  • 1/2 pound bacon, chopped
  • 1 cup stone-ground grits
  • 4 cups chicken broth
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup heavy cream
  • 2 tablespoons unsalted butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook bacon in a large skillet over medium heat until crispy. Remove bacon and drain on paper towels, reserving 2 tablespoons of bacon grease in the skillet.
  2. Add onion to the skillet and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  3. Add shrimp to the skillet and cook until pink and opaque, about 2-3 minutes per side. Season with salt, pepper, and smoked paprika.
  4. In a medium saucepan, bring chicken broth to a boil. Slowly whisk in grits. Reduce heat to low, cover, and simmer, stirring occasionally, until thickened and creamy, about 20-25 minutes.
  5. Stir in butter, heavy cream, and cheddar cheese into the grits until melted and smooth. Season with salt and pepper.
  6. To serve, spoon grits into bowls. Top with shrimp and crispy bacon. Garnish with fresh parsley.
