- 1 pound large shrimp, peeled and deveined
- 1/2 pound bacon, chopped
- 1 cup stone-ground grits
- 4 cups chicken broth
- 1 cup shredded sharp cheddar cheese
- 1/4 cup heavy cream
- 2 tablespoons unsalted butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- Cook bacon in a large skillet over medium heat until crispy. Remove bacon and drain on paper towels, reserving 2 tablespoons of bacon grease in the skillet.
- Add onion to the skillet and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
- Add shrimp to the skillet and cook until pink and opaque, about 2-3 minutes per side. Season with salt, pepper, and smoked paprika.
- In a medium saucepan, bring chicken broth to a boil. Slowly whisk in grits. Reduce heat to low, cover, and simmer, stirring occasionally, until thickened and creamy, about 20-25 minutes.
- Stir in butter, heavy cream, and cheddar cheese into the grits until melted and smooth. Season with salt and pepper.
- To serve, spoon grits into bowls. Top with shrimp and crispy bacon. Garnish with fresh parsley.
Notes
- Adjust the consistency of the grits by adding more broth if needed.
- For extra flavor, add a dash of hot sauce to the grits.
- You can substitute other types of cheese for cheddar.
