Ingredients

  • 1 cup chopped onion
  • 1/2 cup chopped celery
  • 1/2 cup chopped carrots
  • 4 cups seafood stock
  • 1 cup heavy cream
  • 1/2 cup dry white wine
  • 1/2 pound cooked crab meat, shredded
  • 1/2 pound cooked shrimp, peeled and deveined
  • 1/2 pound cooked lobster meat, chopped
  • 1/4 cup all-purpose flour
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add onion, celery, and carrots. Cook until softened, about 5-7 minutes.
  3. Stir in flour and cook for 1 minute, stirring constantly.
  4. Gradually whisk in seafood stock and white wine. Bring to a simmer, stirring until thickened.
  5. Reduce heat to low and stir in heavy cream.
  6. Add crab meat, shrimp, and lobster meat. Heat through for 3-5 minutes.
  7. Season with salt and pepper to taste.
  8. Garnish with fresh parsley before serving.

  • For a smoother bisque, blend a portion of the soup before adding the seafood.
