A rich and creamy seafood bisque featuring crab, shrimp, and lobster.

- 2 tablespoons butter
- 1 cup chopped onion
- 1/2 cup chopped celery
- 1/2 cup chopped carrots
- 4 cups seafood stock
- 1 cup heavy cream
- 1/2 cup dry white wine
- 1/2 pound cooked crab meat, shredded
- 1/2 pound cooked shrimp, peeled and deveined
- 1/2 pound cooked lobster meat, chopped
- 1/4 cup all-purpose flour
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish
Instructions
- Melt butter in a large pot over medium heat.
- Add onion, celery, and carrots. Cook until softened, about 5-7 minutes.
- Stir in flour and cook for 1 minute, stirring constantly.
- Gradually whisk in seafood stock and white wine. Bring to a simmer, stirring until thickened.
- Reduce heat to low and stir in heavy cream.
- Add crab meat, shrimp, and lobster meat. Heat through for 3-5 minutes.
- Season with salt and pepper to taste.
- Garnish with fresh parsley before serving.
Notes
- For a smoother bisque, blend a portion of the soup before adding the seafood.
- Adjust seafood quantities to your preference.
- Serve with crusty bread for dipping.
