- 1/2 cup uncooked short-grain rice
- 2 cups water
- 1 teaspoon salt
- 3 cups whole milk
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon (optional, for garnish)
Instructions
- Combine rice, water, and salt in a medium saucepan. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, or until water is absorbed.
- Stir in milk and sugar. Bring to a gentle simmer over medium-low heat, stirring frequently to prevent sticking.
- Continue to simmer, stirring often, for 20-25 minutes, or until the rice is tender and the pudding has thickened to your desired consistency.
- Remove from heat and stir in vanilla extract.
- Serve warm or chilled, garnished with ground cinnamon if desired.
Notes
- For a richer pudding, use heavy cream for part of the milk.
- Adjust sugar to your taste.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
