Description
A hearty and flavorful taco soup with a creamy ranch dressing base. This soup is easy to make and perfect for a weeknight meal.

- 1 pound ground beef
- 1 packet (1 ounce) taco seasoning
- 1 can (15 ounces) kidney beans, drained and rinsed
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) pinto beans, drained and rinsed
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 can (10 ounces) diced tomatoes and green chilies, undrained
- 1 packet (1 ounce) ranch seasoning mix
- 4 cups beef broth
- 1 cup shredded cheddar cheese (for topping)
- 1/2 cup sour cream (for topping)
Instructions
- Brown ground beef in a large pot over medium heat. Drain off any excess grease.
- Stir in taco seasoning and cook for 1 minute more.
- Add kidney beans, black beans, pinto beans, diced tomatoes, diced tomatoes and green chilies, ranch seasoning mix, and beef broth to the pot.
- Bring to a boil, then reduce heat and simmer for at least 20 minutes, or until flavors have melded.
- Serve hot, topped with shredded cheddar cheese and sour cream.
Notes
- You can substitute ground turkey or chicken for ground beef.
- For a vegetarian option, omit the ground beef and add an extra can of beans or corn.
- Adjust the amount of ranch seasoning to your preference.
