This traditional Polish dish combines tender pork with tangy sauerkraut, slow-cooked to perfection. It’s a hearty and flavorful meal, perfect for a comforting dinner.

- 2 lbs pork shoulder, cut into 2-inch cubes
- 2 tbsp vegetable oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 lbs sauerkraut, rinsed and drained
- 1 cup chicken broth
- 1 bay leaf
- 1 tsp caraway seeds
- 1/2 tsp black pepper
- 1/4 cup chopped fresh parsley for garnish
Instructions
- Heat vegetable oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.
- Add pork cubes and brown on all sides, about 5-7 minutes. Remove pork and set aside.
- Add chopped onion to the pot and cook until softened, about 5 minutes.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Return pork to the pot. Add sauerkraut, chicken broth, bay leaf, caraway seeds, and black pepper.
- Bring to a simmer, then reduce heat to low. Cover and cook for 2-3 hours, or until pork is very tender.
- Remove bay leaf before serving. Garnish with fresh parsley.
Notes
- Rinsing the sauerkraut helps reduce its saltiness. Adjust to your preference.
- For extra flavor, you can add a chopped apple or a splash of white wine.
- This dish tastes even better the next day as the flavors meld.
