  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • ¼ cup chopped pistachios, for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Add softened butter, 1 cup milk, eggs, and 1 teaspoon vanilla extract to the dry ingredients. Beat with an electric mixer on medium speed for 2 minutes, scraping down the sides of the bowl as needed.
  4. Fold in the finely ground pistachios.
  5. Divide batter evenly between the prepared cake pans.
  6. Bake for 25-30 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let cakes cool in the pans for 10 minutes before inverting onto a wire rack to cool completely.
  8. For the frosting, in a large bowl, beat softened cream cheese and ½ cup softened butter until smooth and creamy.
  9. Gradually add powdered sugar, mixing until well combined.
  10. Stir in 1 teaspoon vanilla extract and 2 tablespoons milk until the frosting is light and fluffy.
  11. Once cakes are completely cool, frost the layers and top of the cake.
  12. Garnish with chopped pistachios.
