Spicy and sweet candied pineapple with a kick of heat, perfect for snacks or garnishes.
Ingredients

- 1 fresh pineapple, peeled and cored
- 1 cup granulated sugar
- 1/2 cup water
- 1/4 cup jalapeño peppers, thinly sliced (seeds removed for less heat)
- 1/4 cup chopped fresh cilantro
- 1 tablespoon lime juice
Instructions
- Cut pineapple into 1/2-inch cubes.
- In a saucepan, combine sugar and water. Heat until sugar dissolves.
- Add pineapple cubes and jalapeño slices to the syrup.
- Bring to a simmer and cook for 20-25 minutes, or until pineapple is tender and translucent.
- Stir in cilantro and lime juice.
- Drain pineapple, reserving syrup if desired.
- Spread pineapple on a baking sheet lined with parchment paper.
- Dry at a low temperature in the oven (around 170°F or 77°C) for 2-3 hours, or until firm and slightly chewy.
Notes
- Adjust jalapeño quantity to control spice level.
- Can be stored in an airtight container at room temperature for up to two weeks.
- The reserved syrup can be used as a spicy sweetener for drinks or glazes.
