Description
Sweet and savory jam with peaches and bacon, perfect for spreading on toast or pairing with cheese.

- 1 pound bacon, diced
- 2 pounds fresh peaches, peeled, pitted, and diced
- 1/2 cup apple cider vinegar
- 1/2 cup packed brown sugar
- 1/4 cup maple syrup
- 1 teaspoon smoked paprika
- 1/2 teaspoon red pepper flakes (optional)
Instructions
- Cook bacon in a large pot or Dutch oven over medium heat until crispy. Remove bacon with a slotted spoon and set aside, reserving 2 tablespoons of bacon fat in the pot.
- Add diced peaches to the pot with bacon fat. Cook for 5-7 minutes, stirring occasionally, until softened.
- Stir in apple cider vinegar, brown sugar, maple syrup, smoked paprika, and red pepper flakes (if using). Bring to a simmer.
- Reduce heat to low and cook for 45-60 minutes, stirring occasionally, until the mixture thickens and peaches break down.
- Add the cooked bacon back to the pot and stir to combine.
- Remove from heat and let cool slightly before transferring to jars.
- Store in the refrigerator for up to 2-3 weeks.
Notes
- For a smoother jam, you can use an immersion blender to blend some of the mixture after cooking.
- Adjust the amount of red pepper flakes to your preferred spice level.
