Description

Sweet and savory jam with peaches and bacon, perfect for spreading on toast or pairing with cheese.


Ingredients

  • 1 pound bacon, diced
  • 2 pounds fresh peaches, peeled, pitted, and diced
  • 1/2 cup apple cider vinegar
  • 1/2 cup packed brown sugar
  • 1/4 cup maple syrup
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Cook bacon in a large pot or Dutch oven over medium heat until crispy. Remove bacon with a slotted spoon and set aside, reserving 2 tablespoons of bacon fat in the pot.
  2. Add diced peaches to the pot with bacon fat. Cook for 5-7 minutes, stirring occasionally, until softened.
  3. Stir in apple cider vinegar, brown sugar, maple syrup, smoked paprika, and red pepper flakes (if using). Bring to a simmer.
  4. Reduce heat to low and cook for 45-60 minutes, stirring occasionally, until the mixture thickens and peaches break down.
  5. Add the cooked bacon back to the pot and stir to combine.
  6. Remove from heat and let cool slightly before transferring to jars.
  7. Store in the refrigerator for up to 2-3 weeks.

Notes

  • For a smoother jam, you can use an immersion blender to blend some of the mixture after cooking.
  • Adjust the amount of red pepper flakes to your preferred spice level.
