Ingredients

  • 1 tablespoon olive oil
  • 1 pound Italian sausage, casings removed
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 4 cups chicken broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 8 ounces ditalini pasta
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish
  • Parmesan cheese, grated, for serving

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add sausage and cook, breaking it up with a spoon, until browned. Drain excess fat.
  2. Add onion to the pot and cook until softened, about 5-7 minutes. Add garlic and cook for 1 minute more until fragrant.
  3. Stir in crushed tomatoes, cannellini beans, chicken broth, oregano, and red pepper flakes (if using). Bring to a simmer.
  4. Add ditalini pasta and cook according to package directions until al dente, stirring occasionally to prevent sticking.
  5. Season with salt and pepper to taste.
  6. Ladle into bowls and garnish with fresh parsley and grated Parmesan cheese.

Notes

  • You can use any type of short pasta for this recipe.
  • Adjust red pepper flakes to your spice preference.
