A hearty and flavorful pasta and beans dish with sausage, perfect for a comforting meal.

- 1 tablespoon olive oil
- 1 pound Italian sausage, casings removed
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1 (15 ounce) can cannellini beans, rinsed and drained
- 4 cups chicken broth
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- 8 ounces ditalini pasta
- Salt and black pepper to taste
- Fresh parsley, chopped, for garnish
- Parmesan cheese, grated, for serving
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add sausage and cook, breaking it up with a spoon, until browned. Drain excess fat.
- Add onion to the pot and cook until softened, about 5-7 minutes. Add garlic and cook for 1 minute more until fragrant.
- Stir in crushed tomatoes, cannellini beans, chicken broth, oregano, and red pepper flakes (if using). Bring to a simmer.
- Add ditalini pasta and cook according to package directions until al dente, stirring occasionally to prevent sticking.
- Season with salt and pepper to taste.
- Ladle into bowls and garnish with fresh parsley and grated Parmesan cheese.
Notes
- You can use any type of short pasta for this recipe.
- Adjust red pepper flakes to your spice preference.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
