  • 1 pound smoked sausage, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups chicken broth
  • 12 ounces pasta (penne or rotini work well)
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add sliced smoked sausage and cook until browned, about 5-7 minutes. Remove sausage from the pot and set aside.
  2. Add chopped onion to the pot and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute more until fragrant.
  3. Stir in diced tomatoes (undrained) and chicken broth. Bring the mixture to a boil.
