Description
This one-pot smoked sausage pasta is a quick and flavorful meal perfect for weeknights. It combines tender pasta with savory smoked sausage and a creamy tomato sauce, all cooked in a single pot for easy cleanup.

- 1 tablespoon olive oil
- 1 pound smoked sausage, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 4 cups chicken broth
- 12 ounces pasta (penne or rotini work well)
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt to taste
- Black pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add sliced smoked sausage and cook until browned, about 5-7 minutes. Remove sausage from the pot and set aside.
- Add chopped onion to the pot and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute more until fragrant.
- Stir in diced tomatoes (undrained) and chicken broth. Bring the mixture to a boil.
- Add pasta to the pot and stir. Reduce heat to medium-low, cover, and simmer for 10-12 minutes, or until pasta is al dente, stirring occasionally to prevent sticking.
- Return the cooked sausage to the pot. Stir in heavy cream and Parmesan cheese. Cook for 2-3 minutes, or until the sauce thickens slightly.
- Season with salt and black pepper to taste.
- Garnish with fresh chopped parsley before serving.
Notes
- For a spicier kick, add a pinch of red pepper flakes with the garlic.
- Any type of smoked sausage can be used, such as kielbasa or Andouille.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
