Instructions
- Preheat oven to 325°F (160°C). Line a 12-cup muffin tin with paper liners. Place one vanilla wafer cookie in the bottom of each liner.
- In a large bowl, beat cream cheese and sugar until smooth.
- Mix in sour cream and vanilla until combined.
- Beat in the egg until just incorporated.
- Stir in mini chocolate chips.
- Spoon the mixture evenly over the vanilla wafer cookies in the muffin tin, filling each cup about two-thirds full.
- Bake for 20-25 minutes, or until the centers are set.
- Let cool in the muffin tin on a wire rack for 30 minutes.
- Refrigerate for at least 2 hours before serving.
