Ingredients

  • 2 ripe bananas
  • 2 large eggs
  • 1/2 cup milk (dairy or non-dairy)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Pinch of salt
  • Butter or oil for cooking

Instructions

  1. Combine rolled oats, bananas, eggs, milk, vanilla extract, cinnamon, and salt in a blender.
  2. Blend until smooth. The batter should be thick but pourable. Add a little more milk if it’s too thick.
  3. Heat a lightly oiled or buttered non-stick skillet or crepe pan over medium heat.
  4. Pour about 1/4 cup of batter onto the hot skillet for each crepe.
  5. Cook for 2-3 minutes per side, until golden brown and cooked through.
  6. Repeat with the remaining batter.
  7. Serve warm with your favorite toppings.
