Ingredients
Scale
- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup powdered sugar
- 1 cup creamy peanut butter
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
- 2 tablespoons creamy peanut butter (for topping)
Instructions
- Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
- In a medium bowl, combine graham cracker crumbs, melted butter, powdered sugar, 1 cup creamy peanut butter, and vanilla extract. Mix until well combined and a dough forms.
- Press the mixture evenly into the prepared baking pan.
- In a microwave-safe bowl, melt the chocolate chips and 2 tablespoons creamy peanut butter together. Microwave in 30-second intervals, stirring after each, until smooth.
- Pour the melted chocolate mixture over the peanut butter base and spread evenly.
- Refrigerate for at least 1 hour, or until firm.
- Once firm, lift the bars out of the pan using the parchment paper overhang. Cut into squares.
Notes
- Store leftover bars in an airtight container in the refrigerator for up to 5 days.
- For a richer chocolate flavor, use dark chocolate chips.
- You can substitute other nut butters for peanut butter if desired.
