Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 cup powdered sugar
  • 1 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 2 tablespoons creamy peanut butter (for topping)

Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, powdered sugar, 1 cup creamy peanut butter, and vanilla extract. Mix until well combined and a dough forms.
  3. Press the mixture evenly into the prepared baking pan.
  4. In a microwave-safe bowl, melt the chocolate chips and 2 tablespoons creamy peanut butter together. Microwave in 30-second intervals, stirring after each, until smooth.
  5. Pour the melted chocolate mixture over the peanut butter base and spread evenly.
  6. Refrigerate for at least 1 hour, or until firm.
  7. Once firm, lift the bars out of the pan using the parchment paper overhang. Cut into squares.
