Ingredients

- 1 cup semi-sweet chocolate chips
- 1/4 cup white chocolate chips
- 1/2 teaspoon peppermint extract
- 1/4 teaspoon green food coloring (optional)
- 1 tablespoon chopped fresh mint (optional)
Instructions
- Line a baking sheet with parchment paper.
- Melt the semi-sweet chocolate chips in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth.
- Stir in the peppermint extract and green food coloring (if using).
- Drop rounded tablespoons of the chocolate mixture onto the prepared baking sheet, forming round medallions.
- Melt the white chocolate chips in a separate microwave-safe bowl using the same method as the semi-sweet chocolate.
- Drizzle the melted white chocolate over the semi-sweet chocolate medallions.
- Sprinkle with chopped fresh mint (if using).
- Refrigerate for at least 30 minutes, or until firm.
Notes
- For a stronger mint flavor, add a few more drops of peppermint extract.
- You can use milk chocolate or dark chocolate instead of semi-sweet chocolate.
- Store the medallions in an airtight container in the refrigerator.
