Description

Easy no-bake mint chocolate medallions that are perfect for holidays or any occasion.


Ingredients

  • 1 cup semi-sweet chocolate chips
  • 1/4 cup white chocolate chips
  • 1/2 teaspoon peppermint extract
  • 1/4 teaspoon green food coloring (optional)
  • 1 tablespoon chopped fresh mint (optional)

Instructions

  1. Line a baking sheet with parchment paper.
  2. Melt the semi-sweet chocolate chips in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth.
  3. Stir in the peppermint extract and green food coloring (if using).
  4. Drop rounded tablespoons of the chocolate mixture onto the prepared baking sheet, forming round medallions.
  5. Melt the white chocolate chips in a separate microwave-safe bowl using the same method as the semi-sweet chocolate.
  6. Drizzle the melted white chocolate over the semi-sweet chocolate medallions.
  7. Sprinkle with chopped fresh mint (if using).
  8. Refrigerate for at least 30 minutes, or until firm.

Notes

  • For a stronger mint flavor, add a few more drops of peppermint extract.
  • You can use milk chocolate or dark chocolate instead of semi-sweet chocolate.
