Instructions
- For Baked Onions: Preheat oven to 375°F (190°C). Slice one onion into 1/2-inch thick rings. Toss with 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Spread in a single layer on a baking sheet. Bake for 20-25 minutes, or until tender and slightly caramelized.
- For Fried Onion Rings: Slice one onion into 1/4-inch thick rings. Separate the rings. In a shallow dish, whisk together flour, 1/4 teaspoon salt, and 1/8 teaspoon pepper. In another shallow dish, pour buttermilk. In a third shallow dish, place panko breadcrumbs. Dip each onion ring first in the flour, then in buttermilk, and finally in panko, pressing to coat. Heat vegetable oil in a large pot or deep fryer to 350°F (175°C). Fry onion rings in batches for 2-3 minutes per side, or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels. Season with salt immediately.
- For Pickled Onions: Thinly slice one onion. In a small saucepan, combine apple cider vinegar, water, sugar, mustard seeds, celery seeds, 1/4 teaspoon salt, and 1/8 teaspoon pepper. Bring to a boil, then reduce heat and simmer for 2 minutes, stirring until sugar dissolves. Pack sliced onions into a clean jar. Pour hot pickling liquid over the onions, ensuring they are fully submerged. Let cool to room temperature, then cover and refrigerate for at least 1 hour before serving.
