Crispy smashed potatoes loaded with cheese, bacon, and green onions.
Ingredients

- 1.5 pounds baby potatoes
- 2 tablespoons olive oil
- salt and black pepper to taste
- 1 cup shredded cheddar cheese
- 4 slices bacon, cooked and crumbled
- 1/4 cup chopped green onions
- sour cream for serving (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Boil potatoes until tender, about 15-20 minutes.
- Drain potatoes and place on a baking sheet. Gently smash each potato with a fork or potato masher.
- Drizzle with olive oil and season with salt and pepper.
- Bake for 20-25 minutes, or until golden brown and crispy.
- Remove from oven and top with shredded cheese, crumbled bacon, and green onions.
- Return to oven for 5-10 minutes, or until cheese is melted and bubbly.
- Serve hot, with sour cream if desired.
Notes
- Use any type of baby potatoes you prefer.
- Adjust toppings to your liking.
- These are best served immediately.
