  • 2 cups grated zucchini (about 2 medium zucchinis)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, beat the eggs and sugar until well combined.
  4. Gradually whisk in the vegetable oil and vanilla extract into the egg mixture.
  5. Stir in the lemon zest and lemon juice.
  6. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  7. Gently fold in the grated zucchini and nuts (if using).
  8. Pour the batter into the prepared loaf pan.
