Ingredients

- 250g Weet-Bix, crushed
- 125g melted butter
- 1 cup shredded coconut
- 1/2 cup caster sugar
- For the icing:
- 1 1/2 cups icing sugar
- Juice of 1–2 lemons
Instructions
- Combine crushed Weet-Bix, melted butter, coconut, and sugar in a bowl.
- Press mixture firmly into a greased and lined slice tin.
- Refrigerate for at least 30 minutes.
- Mix icing sugar and lemon juice until smooth.
- Spread icing over the chilled slice.
- Refrigerate until icing is set.
- Cut into squares to serve.

- Ensure the Weet-Bix are finely crushed for the best texture.
- Adjust lemon juice in the icing to your desired consistency and tartness.
