Ingredients
Scale
- 1 cup (2 sticks) unsalted butter, softened
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 (14 ounce) can sweetened condensed milk
- 1/2 cup fresh lemon juice
- 1 tablespoon lemon zest
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Gradually add the flour and salt, mixing until a crumbly dough forms.
- Press half of the dough evenly into the bottom of the prepared baking pan to form the crust.
- In a separate bowl, whisk together the sweetened condensed milk, lemon juice, and lemon zest until well combined. Pour the lemon filling evenly over the crust.
- Crumble the remaining half of the dough over the lemon filling.
- Bake for 30-35 minutes, or until the topping is golden brown and the filling is set.
- Let cool completely in the pan on a wire rack before cutting into bars.
Notes
- Ensure butter is at room temperature for easy creaming.
- Do not overmix the dough for the crust and topping.
- Cool bars completely before cutting to prevent crumbling.
