- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large bowl, cream together 1 cup butter and granulated sugar until light and fluffy.
- Beat in eggs one at a time, then stir in 1 teaspoon vanilla extract.
- In a separate bowl, combine buttermilk and 1/2 cup key lime juice.
- Alternately add dry ingredients and buttermilk mixture to the wet ingredients, beginning and ending with dry ingredients, mixing until just combined. Fold in 2 tablespoons key lime zest.
