Sugar free, low carb, and keto friendly Butterfinger candy bars.
Ingredients

- 1⁄2 cup keto peanut butter
- 1⁄4 cup butter
- 1⁄4 cup allulose or other keto sweetener
- 1 tsp vanilla extract
- 1 cup crushed pork rinds or keto cereal
- 1 cup sugar free chocolate chips
- 1 tbsp coconut oil
Instructions
- In a saucepan, melt together peanut butter, butter, and allulose over medium heat.
- Once melted and smooth, remove from heat and stir in vanilla extract.
- Add crushed pork rinds or keto cereal to the mixture and stir until combined.
- Pour the mixture into a parchment-lined 8×8 inch pan. Spread evenly.
- Place in the freezer for at least 30 minutes to firm up.
- Once firm, cut into desired bar shapes.
- In a separate bowl, melt sugar free chocolate chips and coconut oil in the microwave or over a double boiler until smooth.
- Dip each bar into the melted chocolate, ensuring it is fully coated.
- Place the coated bars on a parchment-lined baking sheet.
- Return to the freezer for another 15-20 minutes or until the chocolate has set.
- Store in the refrigerator or freezer.
Notes
- Ensure your peanut butter is keto-friendly with no added sugar.
- Allulose works well as it doesn’t crystalize like some other sweeteners.
- Crushed pork rinds give the classic crunchy texture. You can use keto cereal for a milder flavor.
