Ingredients

  • 1⁄2 cup keto peanut butter
  • 1⁄4 cup butter
  • 1⁄4 cup allulose or other keto sweetener
  • 1 tsp vanilla extract
  • 1 cup crushed pork rinds or keto cereal
  • 1 cup sugar free chocolate chips
  • 1 tbsp coconut oil

Instructions

  1. In a saucepan, melt together peanut butter, butter, and allulose over medium heat.
  2. Once melted and smooth, remove from heat and stir in vanilla extract.
  3. Add crushed pork rinds or keto cereal to the mixture and stir until combined.
  4. Pour the mixture into a parchment-lined 8×8 inch pan. Spread evenly.
  5. Place in the freezer for at least 30 minutes to firm up.
  6. Once firm, cut into desired bar shapes.
  7. In a separate bowl, melt sugar free chocolate chips and coconut oil in the microwave or over a double boiler until smooth.
  8. Dip each bar into the melted chocolate, ensuring it is fully coated.
  9. Place the coated bars on a parchment-lined baking sheet.
  10. Return to the freezer for another 15-20 minutes or until the chocolate has set.
  11. Store in the refrigerator or freezer.
