Description
Creamy macaroni salad with the spicy kick of jalapeño poppers.
Ingredients

- 1 pound elbow macaroni
- 1 cup mayonnaise
- 1/2 cup sour cream
- 4 ounces cream cheese, softened
- 1/4 cup chopped pickled jalapeños
- 2 tablespoons jalapeño brine
- 1/2 cup shredded cheddar cheese
- 1/4 cup cooked crumbled bacon
- 2 green onions, sliced
- Salt and black pepper to taste
Instructions
- Cook macaroni according to package directions. Drain and rinse with cold water.
- In a large bowl, whisk together mayonnaise, sour cream, cream cheese, chopped jalapeños, and jalapeño brine until smooth.
- Add cooked macaroni, cheddar cheese, bacon, and green onions to the bowl.
- Gently stir to combine all ingredients.
- Season with salt and pepper to taste.
- Cover and refrigerate for at least 1 hour before serving.
Notes
- For extra spice, leave in some of the jalapeño seeds.
- Add grilled chicken or shrimp for a main dish salad.
- This salad is best served chilled.
