Creamy macaroni salad with the spicy kick of jalapeño poppers.


Ingredients

  • 1 pound elbow macaroni
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 4 ounces cream cheese, softened
  • 1/4 cup chopped pickled jalapeños
  • 2 tablespoons jalapeño brine
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cooked crumbled bacon
  • 2 green onions, sliced
  • Salt and black pepper to taste

Instructions

  1. Cook macaroni according to package directions. Drain and rinse with cold water.
  2. In a large bowl, whisk together mayonnaise, sour cream, cream cheese, chopped jalapeños, and jalapeño brine until smooth.
  3. Add cooked macaroni, cheddar cheese, bacon, and green onions to the bowl.
  4. Gently stir to combine all ingredients.
  5. Season with salt and pepper to taste.
  6. Cover and refrigerate for at least 1 hour before serving.

Notes

  • For extra spice, leave in some of the jalapeño seeds.
