Ingredients

  • 1/4 cup olive oil
  • 2 tablespoons white wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons chopped fresh chives
  • Salt and black pepper to taste

Instructions

  1. Wash and quarter the potatoes.
  2. Place potatoes in a large pot and cover with cold water. Add a pinch of salt.
  3. Bring to a boil and cook until potatoes are tender, about 15-20 minutes.
  4. Drain the potatoes and let them cool slightly.
  5. While potatoes are cooling, whisk together olive oil, white wine vinegar, Dijon mustard, and minced garlic in a small bowl.
  6. In a large bowl, combine the warm potatoes, chopped parsley, and chives.
  7. Pour the dressing over the potatoes and gently toss to coat.
  8. Season with salt and pepper to taste.
  9. Serve warm or at room temperature.
