- 1 lb beef stew meat, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 cup diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and black pepper to taste
- 1 lb potatoes, peeled and cubed
- 1 cup frozen peas
Instructions
- Pat the beef dry with paper towels. Season with salt and pepper.
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Sear the beef in batches until browned on all sides. Remove beef and set aside.
- Add the chopped onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
- Add the minced garlic and cook for 1 minute more until fragrant.
- Return the beef to the pot. Pour in the beef broth and diced tomatoes. Add thyme and rosemary.
- Bring to a boil, then reduce heat, cover, and simmer for 1.5 hours, or until the beef is tender.
- Add the cubed potatoes to the pot. Cover and simmer for another 30 minutes, or until the potatoes are tender.
- Stir in the frozen peas and cook for 5 minutes until heated through.
- Season with additional salt and pepper if needed. Serve hot.
Notes
- For a thicker stew, you can mix 2 tablespoons of flour with 1/4 cup of water to create a slurry, then stir it into the stew during the last 15 minutes of cooking.
- Feel free to add other vegetables like green beans, corn, or bell peppers.
- This dish can be made ahead of time and reheats well.
