Ingredients

  • 1 lb beef stew meat, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper to taste
  • 1 lb potatoes, peeled and cubed
  • 1 cup frozen peas

Instructions

  1. Pat the beef dry with paper towels. Season with salt and pepper.
  2. Heat olive oil in a large pot or Dutch oven over medium-high heat. Sear the beef in batches until browned on all sides. Remove beef and set aside.
  3. Add the chopped onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
  4. Add the minced garlic and cook for 1 minute more until fragrant.
  5. Return the beef to the pot. Pour in the beef broth and diced tomatoes. Add thyme and rosemary.
  6. Bring to a boil, then reduce heat, cover, and simmer for 1.5 hours, or until the beef is tender.
  7. Add the cubed potatoes to the pot. Cover and simmer for another 30 minutes, or until the potatoes are tender.
  8. Stir in the frozen peas and cook for 5 minutes until heated through.
  9. Season with additional salt and pepper if needed. Serve hot.

Notes

  • For a thicker stew, you can mix 2 tablespoons of flour with 1/4 cup of water to create a slurry, then stir it into the stew during the last 15 minutes of cooking.
  • Feel free to add other vegetables like green beans, corn, or bell peppers.
  • This dish can be made ahead of time and reheats well.
