- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 red bell pepper, cut into 1-inch pieces
- 1 green bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1/2 fresh pineapple, cut into 1-inch pieces
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 2 tbsp rice vinegar
- 1 tbsp fresh ginger, grated
- 2 cloves garlic, minced
- 1 tbsp sesame oil
- 1/4 tsp red pepper flakes (optional)
- Wooden or metal skewers
Instructions
- In a medium bowl, whisk together soy sauce, brown sugar, rice vinegar, ginger, garlic, sesame oil, and red pepper flakes (if using).
- Add chicken cubes to the marinade, ensuring all pieces are coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
- If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- Preheat grill to medium-high heat.
- Thread chicken, bell peppers, and pineapple alternately onto the skewers.
- Grill kebabs for 10-15 minutes, turning occasionally, until chicken is cooked through and vegetables are tender-crisp.
- Serve hot and enjoy.
