- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup milk
- 1/2 cup finely diced ham
- 1/2 cup shredded cheese (such as Gruyere or cheddar)
- Salt to taste
- Black pepper to taste
- 1/2 cup all-purpose flour (for dredging)
- 2 eggs, beaten
- 1 cup breadcrumbs
- Oil for frying
Instructions
- In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute.
- Gradually whisk in milk until smooth. Cook, stirring constantly, until the mixture thickens.
- Remove from heat and stir in diced ham, shredded cheese, salt, and pepper.
- Spread the mixture onto a plate and refrigerate for at least 1 hour, or until firm.
- Shape the chilled mixture into small cylinders or balls.
- Set up a dredging station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs.
- Dip each croquette in flour, then in egg, and finally coat with breadcrumbs.
- Heat oil in a deep fryer or large pot to 350°F (175°C).
- Fry croquettes in batches until golden brown and crispy, about 2-3 minutes per batch.
- Remove with a slotted spoon and drain on paper towels.
- Serve hot.
Notes
- Ensure the mixture is well-chilled before shaping.
- Do not overcrowd the fryer when cooking.
- Croquettes can be made ahead and reheated in the oven.
