A healthier twist on classic macaroni salad using Greek yogurt.
Ingredients

- 1 pound elbow macaroni
- 1 cup plain Greek yogurt
- 1/2 cup mayonnaise
- 1/4 cup chopped celery
- 1/4 cup chopped red onion
- 1/4 cup chopped bell pepper
- 2 tablespoons Dijon mustard
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
Instructions
- Cook macaroni according to package directions. Drain and rinse with cold water.
- In a large bowl, combine Greek yogurt, mayonnaise, Dijon mustard, and apple cider vinegar.
- Add cooked macaroni, celery, red onion, and bell pepper to the bowl.
- Stir to combine ingredients and coat macaroni evenly.
- Season with salt and pepper to taste.
- Refrigerate for at least 30 minutes before serving.
Notes
- You can add other vegetables like carrots or peas.
- For extra flavor, add fresh herbs like dill or parsley.
- Adjust the amount of mayonnaise and Greek yogurt to your preference.
