- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- 2 cloves garlic, minced
- 1 tablespoon dried oregano
- 1 teaspoon salt

- 1/4 cup chopped fresh parsley for garnish
Instructions
- Pat chicken dry with paper towels.
- In a large bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
- Add chicken to the bowl, tossing to coat evenly. Marinate for at least 15 minutes at room temperature, or up to 30 minutes in the refrigerator.
- Preheat oven to 400°F (200°C).
- Arrange chicken in a single layer in a baking dish. Pour any remaining marinade over the chicken.
- Bake for 20-25 minutes, or until chicken is cooked through and internal temperature reaches 165°F (74°C).
- Garnish with fresh parsley before serving.
