Ingredients

- 1 pound spaghetti
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 5 ounces fresh spinach
- 1/4 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- Grated Parmesan cheese for serving (optional)
Instructions
- Cook spaghetti according to package directions. Reserve about 1/2 cup of pasta water before draining.
- While pasta cooks, heat olive oil in a large skillet over medium heat.
- Add minced garlic and red pepper flakes (if using) and cook for about 1 minute until fragrant, being careful not to burn the garlic.
- Add spinach to the skillet in batches, allowing it to wilt before adding more.
- Toss the drained spaghetti with the garlic and spinach mixture.
- Add reserved pasta water a tablespoon at a time if the pasta seems dry, until it reaches your desired consistency.
- Season with salt and black pepper to taste.
- Serve immediately, topped with Parmesan cheese if desired.
Notes
- For extra flavor, you can add a squeeze of lemon juice before serving.
- Add cooked chicken or shrimp for a more complete meal.
