  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 5 ounces fresh spinach
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. Cook spaghetti according to package directions. Reserve about 1/2 cup of pasta water before draining.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat.
  3. Add minced garlic and red pepper flakes (if using) and cook for about 1 minute until fragrant, being careful not to burn the garlic.
  4. Add spinach to the skillet in batches, allowing it to wilt before adding more.
  5. Toss the drained spaghetti with the garlic and spinach mixture.
  6. Add reserved pasta water a tablespoon at a time if the pasta seems dry, until it reaches your desired consistency.
  7. Season with salt and black pepper to taste.
  8. Serve immediately, topped with Parmesan cheese if desired.

Notes
