- Fruit Salad:
- 2 cups mixed berries
- 1 cup chopped melon
- 1 banana, sliced
- 1/4 cup orange juice
- Chocolate Mousse:
- 1 cup heavy cream
- 1/2 cup dark chocolate chips
- 2 tbsp sugar
- Lemon Bars:
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup powdered sugar
- 2 large eggs
- 1/2 cup granulated sugar
- 1/4 cup lemon juice
- 1 tbsp lemon zest
- Berry Crumble:
- 4 cups mixed berries
- 1/2 cup rolled oats
- 1/4 cup brown sugar
- 1/4 cup all-purpose flour
- 1/4 cup cold butter, cubed
Instructions
- Fruit Salad:
- Combine all fruits in a large bowl.
- Pour orange juice over the fruit and gently toss.
- Chill for 15 minutes before serving.
- Chocolate Mousse:
- Melt chocolate chips in a double boiler or microwave.
- In a separate bowl, whip heavy cream and sugar until soft peaks form.
- Fold melted chocolate into the whipped cream until combined.
- Chill for at least 30 minutes before serving.
- Lemon Bars:
- Preheat oven to 350°F (175°C).
- For the crust, combine flour, cold butter, and powdered sugar. Press into an 8×8 inch baking pan.
- Bake crust for 15-20 minutes, until lightly golden.
- While crust bakes, whisk eggs, granulated sugar, lemon juice, and lemon zest for the filling.
- Pour filling over the hot crust.
- Bake for 20-25 minutes, until the filling is set.
- Cool completely before cutting into bars.
- Berry Crumble:
- Preheat oven to 375°F (190°C).
- Place mixed berries in an 8×8 inch baking dish.
- In a bowl, combine oats, brown sugar, flour, and cold butter. Mix until crumbly.
- Sprinkle the crumble mixture over the berries.
- Bake for 30-35 minutes, until the topping is golden and the berries are bubbly.
Notes
- For best flavor, use fresh, ripe fruits for the fruit salad.
- Ensure chocolate is not too hot when folding into whipped cream for the mousse.
- Dust lemon bars with extra powdered sugar before serving for a nice finish.
- Serve berry crumble warm with a scoop of ice cream.
