- 1.5 lbs small red potatoes, quartered
- 1 large onion, roughly chopped

- 0.5 tsp dried thyme

- 0.5 tsp paprika
- 0.25 tsp salt
- 0.25 tsp black pepper
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, combine quartered potatoes and chopped onion.
- Drizzle with 1 tablespoon of olive oil and toss to coat.
- Spread potatoes and onion in a single layer on a large baking sheet.
- In the same bowl, add chicken thighs.
- Drizzle with remaining 1 tablespoon of olive oil.
- Sprinkle with rosemary, thyme, garlic powder, paprika, salt, and black pepper. Toss to coat chicken evenly.
- Arrange chicken thighs on the baking sheet among the potatoes and onion.
- Bake for 25-30 minutes, or until chicken is cooked through and potatoes are tender and golden brown.
- Serve hot.

- For crispier potatoes, turn them halfway through baking.
