  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 8 ounces pasta (penne, rotini, or your favorite)
  • 1 tablespoon olive oil
  • 1 cup broccoli florets
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package directions. Drain, reserving about 1/2 cup of pasta water.
  2. While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from skillet.
  3. Add broccoli to the skillet and cook for 3-4 minutes until tender-crisp. Add minced garlic and cook for 30 seconds until fragrant.
  4. Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and sauce thickens.
  5. Return chicken to the skillet. Add cooked pasta. Toss to coat everything in the sauce. Add reserved pasta water if needed to reach desired consistency.
  6. Season with salt and pepper. Serve immediately.

  • For a lighter sauce, you can use half-and-half instead of heavy cream.
  • Add red pepper flakes for a touch of heat.
  • You can add other vegetables like mushrooms or bell peppers.
