Ingredients

- 1 can (15 oz) apricot halves in light syrup, drained
- 1/4 cup granulated sugar
- 1 teaspoon lemon juice
- 1/2 cup heavy cream, chilled
- 1/4 teaspoon vanilla extract
Instructions
- Combine drained apricots, sugar, and lemon juice in a blender or food processor.
- Blend until smooth.
- In a separate bowl, whip the heavy cream with vanilla extract until stiff peaks form.
- Gently fold the whipped cream into the apricot mixture until just combined.
- Spoon the mousse into individual serving dishes.
- Chill for at least 1 hour before serving.
Notes
- For a richer flavor, use fresh apricots when in season.
- Garnish with fresh mint or a few extra apricot halves.
