  • 1/4 cup plain yogurt
  • 1 tablespoon yellow curry powder
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped celery
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Place the cubed potatoes in a large pot and cover with cold water. Bring to a boil and cook until tender, about 10-15 minutes. Drain and let cool completely.
