A flavorful and vibrant potato salad with a creamy curry dressing.
Ingredients

- 2 pounds yellow potatoes, peeled and cut into 1-inch cubes
- 1/2 cup mayonnaise
- 1/4 cup plain yogurt
- 1 tablespoon yellow curry powder
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup finely chopped red onion
- 1/4 cup chopped celery
- 1/4 cup chopped fresh cilantro
Instructions
- Place the cubed potatoes in a large pot and cover with cold water. Bring to a boil and cook until tender, about 10-15 minutes. Drain and let cool completely.
- In a large bowl, whisk together the mayonnaise, yogurt, curry powder, Dijon mustard, salt, and pepper until smooth.
- Add the cooled potatoes, red onion, celery, and cilantro to the bowl with the dressing. Gently stir to combine.
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled.
Notes
- For a spicier salad, add a pinch of cayenne pepper to the dressing.
- You can substitute sour cream for the yogurt.
- Add chopped hard-boiled eggs for extra protein.
