A hearty and flavorful casserole with ground beef, beans, corn, and cheese, slow-cooked to perfection.

- 1.5 pounds ground beef
- 1 large onion, chopped
- 1 (15 ounce) can kidney beans, rinsed and drained
- 1 (15 ounce) can pinto beans, rinsed and drained
- 1 (15 ounce) can corn, drained
- 1 (10 ounce) can diced tomatoes with green chilies, undrained
- 1 (8 ounce) can tomato sauce
- 1 packet taco seasoning mix
- 2 cups shredded Cheddar cheese
Instructions
- Brown ground beef and onion in a large skillet over medium heat. Drain excess fat.
- Transfer beef mixture to a 6-quart slow cooker.
- Stir in kidney beans, pinto beans, corn, diced tomatoes with green chilies, tomato sauce, and taco seasoning mix.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- During the last 30 minutes of cooking, sprinkle shredded Cheddar cheese over the top.
- Cover and continue cooking until cheese is melted and bubbly.
- Serve hot.
Notes
- For extra spice, add a pinch of red pepper flakes.
- Serve with a dollop of sour cream or a sprinkle of fresh cilantro.
- This casserole can be made ahead and reheated.
