- 1 pound ground beef
- 1/2 cup chopped onion
- 1 clove garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup shredded Monterey Jack cheese
- 1/2 cup shredded cheddar cheese
- 8 flour tortillas (burrito size)
- Vegetable oil for frying
- Salsa, sour cream, and guacamole for serving (optional)
Instructions
- In a large skillet, brown ground beef over medium heat. Drain off excess fat.
- Add onion and garlic to the skillet and cook until softened, about 5 minutes.
- Stir in chili powder, cumin, salt, and pepper. Cook for 1 minute more.
- Remove from heat and stir in both cheeses until melted and combined.
- Warm tortillas according to package directions to make them pliable.
- Spoon about 1/2 cup of the beef mixture onto the center of each tortilla.
- Fold in the sides of the tortilla, then roll up tightly from the bottom to form a burrito. Secure with a toothpick if needed.
- Heat about 1 inch of vegetable oil in a large, deep skillet or Dutch oven to 350°F (175°C).
- Carefully place 2-3 chimichangas in the hot oil, seam-side down. Fry for 2-3 minutes per side, or until golden brown and crispy.
- Remove chimichangas from oil and place on a wire rack lined with paper towels to drain.
- Serve hot with salsa, sour cream, and guacamole, if desired.
Notes
- Do not overfill the tortillas, as this can make them difficult to roll and prone to breaking during frying.
- Ensure the oil is at the correct temperature for even cooking and crispiness.
- Use fresh tortillas for best results.
