Description
This creamy garlic parmesan chicken with cheesy twisted pasta is a comforting and flavorful meal, perfect for a weeknight dinner.

- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 tbsp olive oil
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 12 oz twisted pasta (rotini or fusilli)
- 1 cup shredded mozzarella cheese
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Cook pasta according to package directions. Drain and set aside.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add onion to the same skillet and cook until softened, about 3-5 minutes. Add garlic and cook for 1 minute more until fragrant.
- Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- Stir in heavy cream, Parmesan cheese, Italian seasoning, salt, and pepper. Bring to a gentle simmer and cook for 5 minutes, stirring occasionally, until the sauce thickens slightly.
- Return cooked chicken to the skillet. Add cooked pasta and mozzarella cheese. Stir until the cheese is melted and the pasta is coated in the sauce.
- Garnish with fresh parsley and serve immediately.
Notes
- Adjust the amount of garlic to your preference.
- For a spicier kick, add a pinch of red pepper flakes to the sauce.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
