  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 1/2 cups heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon dried Italian seasoning
  • Salt to taste
  • Black pepper to taste
  • 12 ounces penne pasta
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook penne pasta according to package directions until al dente. Drain and set aside.
  2. While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. Reduce heat to medium. Add chopped onion to the same skillet and cook until softened, about 3-5 minutes.
  4. Add minced garlic to the skillet and cook for 1 minute until fragrant.
  5. Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  6. Stir in heavy cream, Parmesan cheese, and Italian seasoning. Bring to a gentle simmer and cook for 2-3 minutes, stirring occasionally, until the sauce thickens slightly.
  7. Return cooked chicken to the skillet with the sauce. Season with salt and black pepper to taste.
  8. Add the cooked and drained penne pasta to the skillet. Toss to coat the pasta and chicken evenly with the sauce.
  9. Serve immediately, garnished with fresh chopped parsley.

  • For extra flavor, you can marinate the chicken in a little olive oil and garlic powder before cooking.
