- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 tablespoon olive oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1/2 cup chicken broth
- 1 1/2 cups heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon dried Italian seasoning
- Salt to taste
- Black pepper to taste
- 12 ounces penne pasta
- Fresh parsley, chopped, for garnish
Instructions
- Cook penne pasta according to package directions until al dente. Drain and set aside.
- While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Reduce heat to medium. Add chopped onion to the same skillet and cook until softened, about 3-5 minutes.
- Add minced garlic to the skillet and cook for 1 minute until fragrant.
- Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- Stir in heavy cream, Parmesan cheese, and Italian seasoning. Bring to a gentle simmer and cook for 2-3 minutes, stirring occasionally, until the sauce thickens slightly.
- Return cooked chicken to the skillet with the sauce. Season with salt and black pepper to taste.
- Add the cooked and drained penne pasta to the skillet. Toss to coat the pasta and chicken evenly with the sauce.
- Serve immediately, garnished with fresh chopped parsley.
Notes
- For extra flavor, you can marinate the chicken in a little olive oil and garlic powder before cooking.
- If the sauce becomes too thick, add a splash of pasta water or chicken broth to reach your desired consistency.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
