A rich and flavorful Cajun-spiced chicken and spaghetti dish with a creamy sauce.

- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 8 oz spaghetti
- 2 tbsp olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- 1 tsp Cajun seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- Fresh parsley, chopped, for garnish
Instructions
- Cook spaghetti according to package directions. Drain and set aside.
- While pasta cooks, heat olive oil in a large skillet over medium-high heat.
- Add chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
- Add onion and bell peppers to the skillet and cook until softened, about 5-7 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Pour in heavy cream and chicken broth. Bring to a simmer.
- Stir in Parmesan cheese, Cajun seasoning, salt, and pepper. Cook until sauce thickens slightly, about 3-5 minutes.
- Return chicken to the skillet. Add cooked spaghetti to the skillet.
- Toss everything together until the pasta and chicken are well coated with the sauce.
- Serve immediately, garnished with fresh parsley.
Notes
- Adjust Cajun seasoning to your spice preference.
- For a spicier dish, add a pinch of cayenne pepper.
- You can substitute chicken thighs for chicken breasts.
