- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 8 oz pasta (penne or fettuccine recommended)
- 2 tbsp olive oil
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 1/2 cups heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup shredded mozzarella cheese
- 1 tsp Cajun seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- Fresh parsley, chopped, for garnish (optional)
Instructions
- Cook pasta according to package directions. Drain and set aside.
- While pasta cooks, heat olive oil in a large skillet over medium-high heat.
- Add chicken pieces and season with Cajun seasoning, salt, and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add chopped onion to the skillet and cook until softened, about 3-4 minutes.
- Add minced garlic and cook for 1 minute more until fragrant.
- Pour in heavy cream and bring to a simmer.
- Stir in Parmesan cheese and mozzarella cheese until melted and sauce is smooth.
- Return the cooked chicken to the skillet.
- Add the drained pasta to the skillet with the sauce and chicken. Toss to combine and coat evenly.
- Serve immediately, garnished with fresh parsley if desired.
Notes
- Adjust Cajun seasoning to your spice preference.
- For a thicker sauce, simmer for a few extra minutes.
