Ingredients

  • 1 pound linguine pasta
  • 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 0.5 cup shredded mozzarella cheese
  • 0.25 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Cook linguine according to package directions. Drain and set aside.
  2. Season chicken cubes with Cajun seasoning.
  3. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  4. Add bell peppers and onion to the same skillet. Cook until softened, about 5 minutes.
  5. Add minced garlic and cook for 1 minute until fragrant.
  6. Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  7. Stir in heavy cream and bring to a gentle boil. Reduce heat to low.
  8. Gradually whisk in mozzarella cheese and Parmesan cheese until melted and smooth.
  9. Return cooked chicken to the skillet. Add cooked linguine and toss to coat everything in the sauce.
  10. Stir in fresh parsley. Season with salt and black pepper to taste.
  11. Serve hot.
