- 1 pound linguine pasta
- 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 onion, thinly sliced
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 0.5 cup shredded mozzarella cheese
- 0.25 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- Cook linguine according to package directions. Drain and set aside.
- Season chicken cubes with Cajun seasoning.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add bell peppers and onion to the same skillet. Cook until softened, about 5 minutes.
- Add minced garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- Stir in heavy cream and bring to a gentle boil. Reduce heat to low.
- Gradually whisk in mozzarella cheese and Parmesan cheese until melted and smooth.
- Return cooked chicken to the skillet. Add cooked linguine and toss to coat everything in the sauce.
- Stir in fresh parsley. Season with salt and black pepper to taste.
- Serve hot.

- Adjust Cajun seasoning to your spice preference.
- For extra heat, add a pinch of red pepper flakes to the sauce.
- Garnish with extra Parmesan cheese and fresh parsley.
