- 1 lb Italian sausage, casings removed
- 1 cup chopped yellow onion
- 1 cup chopped carrots
- 1 cup chopped celery
- 2 cloves garlic, minced
- 8 cups chicken broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- 1 cup ditalini pasta
- 1/4 cup grated Parmesan cheese, for serving
Instructions
- In a large pot or Dutch oven, cook the Italian sausage over medium heat until browned. Drain off any excess grease.
- Add the chopped onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
- Stir in the minced garlic and cook for 1 minute more until fragrant.
- Pour in the chicken broth and diced tomatoes. Add the oregano and basil. Season with salt and pepper.
- Bring the soup to a boil, then reduce heat and simmer for 15 minutes to allow the flavors to meld.
- Add the ditalini pasta and cook according to package directions, usually 8-10 minutes, until al dente.
- Taste and adjust seasoning if needed.
- Serve hot, garnished with grated Parmesan cheese.

- For a spicier soup, use hot Italian sausage.
- You can add other vegetables like spinach or kale in the last few minutes of simmering.
