- 1 pound pasta, cooked and drained
- 1 can (15 ounces) black beans, rinsed and drained
- 1 can (15 ounces) corn, drained
- 1 red bell pepper, chopped
- 1/2 red onion, finely chopped
- 1/2 cup chopped fresh cilantro
- 1/2 cup chopped green onions
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 2 tablespoons lime juice
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Cook pasta according to package directions. Drain and rinse with cold water.
- In a large bowl, combine cooked pasta, black beans, corn, red bell pepper, red onion, cilantro, and green onions.
- In a small bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, cumin, and garlic powder.
- Pour dressing over pasta mixture and toss to coat evenly.
- Season with salt and pepper to taste.
- Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.
Notes
- You can add cooked chicken or ground beef for extra protein.
- Adjust chili powder and cumin to your spice preference.
- For a lighter dressing, use Greek yogurt instead of sour cream.
