- 2 pounds potatoes, peeled and cubed
- 1/2 cup mayonnaise
- 1/4 cup celery, chopped
- 1/4 cup onion, chopped
- 2 tablespoons sweet pickle relish
- 1 tablespoon Dijon mustard
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 hard-boiled eggs, chopped (optional)
Instructions
- Boil potatoes in a large pot of salted water until tender, about 15-20 minutes.
- Drain potatoes and let them cool slightly.
- In a large bowl, mix together mayonnaise, celery, onion, pickle relish, Dijon mustard, salt, and pepper.
- Add cooled potatoes to the bowl and gently mix to coat.
- Stir in chopped hard-boiled eggs, if desired.
- Chill in the refrigerator for at least 1 hour before serving.
Notes
- For best results, use starchy potatoes like Russet or Yukon Gold.
- Adjust the amount of mayonnaise to your desired creaminess.
