Ingredients

- 1/2 cup fresh cilantro, packed
- 1/4 cup fresh lime juice
- 2 tablespoons olive oil
- 1 tablespoon honey or maple syrup
- 1 clove garlic, minced
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Combine all ingredients in a blender or food processor.
- Blend until smooth and creamy.
- Taste and adjust seasonings as needed.
- Pour over your favorite salad and enjoy.
Notes
- Store leftover dressing in an airtight container in the refrigerator for up to 5 days.
- For a thinner dressing, add a tablespoon of water.
- This dressing also works well as a marinade for chicken or fish.
